Ok, I've got tons of apps but no time to post a review yet.
For now, let me just say that writing on my iPad is hands-down the best way I've found to write in Chinese. I recently fixed the keyboard to allow Chinese and now I have the option of toggling to allow pinyin or to write the character with my finger. It's way more convenient than using my PC which I can never seem to get to work right!
As far as apps I use...I look things up in Pleico a lot, but there are others. I will address them during Christmas break with a long post here. If anyone wants me to try something out, post in the comments!
